As Head of Gastronomy Operations (m/f/d), you will assume overall responsibility for the operational success of our locations and lead our location managers with passion, clarity, and an entrepreneurial mindset.

• Operational Management
• Responsibility for the operational success of all existing and future BRLO restaurant locations
• Leading, coaching, and developing five location managers
• Ensuring consistent quality, service, and leadership standards
• Optimizing cross-location processes in service, kitchen, and bar

Finance & Performance

• Full P&L responsibility for all restaurant operations
• Preparation and management of annual budgets
• Analysis of relevant KPIs and implementation of appropriate measures
• Responsibility for COGS, cost of goods sold, and financial performance
• Regular reporting to senior management

People & Culture

• Support with recruiting, onboarding, and leadership development
• Promotion of a respectful corporate culture
• Conducting feedback and development meetings
• Ensuring high employee satisfaction and low turnover
• Quality & Collaboration
• Ensuring an outstanding guest experience
• Close collaboration with HR, Finance, Marketing, Sales, Events, and the brewery
• Responsibility for occupational safety, HACCP, and facility management
  
  

• Several years of leadership experience in the restaurant, hospitality, or multi-unit industries
• Experience managing budgets and business metrics
• Entrepreneurial mindset and a strong hands-on approach
• Proven experience in leading and developing large teams
• A strong focus on service and quality
• Experience with digital tools such as Gastromatic, Gastronovi, Google Workspace, and Slack
